When you eat a lot of crab legs it's nice to have a variety of dipping sauces. With this recipe, we use Alaska King Crab Legs, but, you can certainly use Alaskan Snow Crab legs or even Sweet Dungeness Crab legs. So, with that, please don't feel you "have" to use only King Crab legs. Each of these types of crab are good sources of heart-healthy omega-3 fatty acids.


Use 3-4 pounds of Alaska King Crab Legs

Fill a large saute' or fry pan to 1/2 inch depth with water.
Add the crab legs and bring to a boil, reduce heat, cover and simmer 4 minutes. Drain and serve with the dipping sauces.

These dipping sauces can be prepared up to 2 days in advance of serving, reheating the butter sauce as needed...


Rouille Sauce

1/3 cup bottled roasted red peppers
2 cloves minced garlic
2/3 cup low-fat mayonnaise
1 teaspoon lemon juice
1/2 teaspoon red pepper flakes

Combine the peppers and garlic in a food processor and process until well minced. Pulse in remaining ingredients until well combined.

Butter Sauce

1/2 cup unsalted melted butter
1 Tablespoon lemon juice
3/4 teaspoon garlic salt
1/2 teaspoon dried dill weed
dash-white pepper

Blend ingredients together in a bowl.

Basil Pesto Mayonnaise

2 cups fresh basil leaves
1-1/2 cups fresh mint leaves
1/2 cup olive oil
3 Tablespoons toasted walnuts, pine nuts OR macadamia nuts
3 cloves garlic
3-1/2 teaspoons lemon juice
1/2 cup grated Parmesan cheese

Combine the basil, mint, oil, nuts, garlic and lemon juice in a food processor, puree until smooth. Add the Parmesan cheese and pulse well until well combined.

For a creamier sauce, combine 1/4 cup basil mint pesto sauce with 1/2 cup of low-fat mayonnaise.
