Crab Meat and Asparagus Soup
Yummy winter-time favorite, Crab Meat and Asparagus Soup will definitely warm you up from the inside out with warm, delicious, and subtle Chinese flavors...
- 6 Cups-Chicken Stock
- 1 Teaspoon-Minced Ginger
- 1 Can-Asparagus-cut into 1 inch sizes (or 1 Cup-Fresh Asparagus)
- 1 Cup-Crab Meat
- 1 Tablespoon-Sherry
- 1 Tablespoon-Soy Sauce
- 2 Tablespoons-Cornstarch-dissolved in 4 Tablespoons-Water
- 1-Scallion-Finely Chopped
- Salt and Pepper-To Taste
Bring to boil on medium high heat, chicken stock and ginger.
Add the asparagus, crab meat, sherry and soy sauce, stir.
Simmer till the asparagus is tender, about 20-30 minutes.
Add the eggs, stirring constantly.
Sprinkle in the chopped scallions and add salt and pepper to taste.
This Crab Meat and Asparagus Soup recipe serves about 6 people. Add a salad and some warm bread and you're good to go! Enjoy!
