How to eat parts of Snow Crab legs.

by Judy
(Gastonia, NC)

Can you eat the meat in the soft part of the crab leg (I guess it is the thigh?) where the upper leg is attached? It sometimes has greenish grey stuff in it, is this safe to eat?

Yes and no...Yes, you can eat the meat up in that upper thigh area. There's a lot of good meat up there. You just have to pick out the meat from in the carcus. The "meat" may be tinted gray and is safe to eat. But the "greenish stuff" no. You don't want to eat that. We wash out all that greenish grey stuff when cleaning the crabs before steaming them.
Hope this helps!
