Crab Stuffed Halibut

Here we cook halibut fillets stuffed with a crab meat mixture. It's sort of like eating fish stuffed with a crab cake. The moisture of the halibut bastes the crab meat as they cook together for an incredible sensation of the ocean! We absolutely love this crab meat recipe and hope you enjoy it and share it as well!





  • 4-12 Ounce to 1 Pound Halibut Fillets

  • 8 Tablespoons-Unsalted Butter

  • 3/4 Cup-Onion-Chopped

  • 1/3 Cup-Celery-Chopped

  • 1/3 Cup-Red or Green Bell Pepper (or both)-Chopped

  • 1 Pound Crab Meat

  • 2 Cups-While Bread-Crumbled

  • 2-Eggs-Beaten

  • 1 Tablespoon-Parsley-Fresh-Chopped

  • 1 Tablespoon-Sherry

  • Dash Salt

  • Fresh Ground Black Pepper

  • Juice of 1 Lemon





Directions:

Preheat oven to 350 degrees.

Heat 4 tablespoon of the butter in a large saute pan.

Add onion when butter foams, celery and bell peppers and cook until the onion gets soft, about 5 minutes.

Set aside and let cool.

Toss the veggies with the crab meat, bread, eggs, parsley and sherry in a large bowl, seasoning with a few dashes of salt and pepper.
Cut a slit with a knife into the halibut along the side, making a pocket for stuffing.

Stuff the halibut with the mixture.

Brush a glass baking pan large enough to hold the fish with some of the melted butter and add the halibut to the pan.

Mix the remaining melted butter with the lemon juice and pour it over the halibut.

Bake for 30-45 minutes or until the fish flakes easily with a fork.

Serve immediately, and add some of the juices left in the pan. It's MMM good!

There's a special way to tell when crabs are done cooking. Their shells will turn bright red when properly cooked.
Already cooked crab meat is widely available. Although it's often sold frozen, seek out fresh cooked crab meat for the best flavor and texture. In the months of September through April, during most crab fishing seasons is when the local fish markets often sell cooked whole crabs. Ask for them to be cleaned and cracked, or take them home crack them yourself and then remove the meat.
