Soft Crab Taco's

We know it seems that there's a lot of slicin' and dicin' in this Soft Crab Tacos recipe, but trust us, it's worth every diced bit!

This crab meat recipe is loaded with flavor and is perfect for reving up something new in the kitchen, we're sure, that the whole family should really enjoy!


Ingredients:





  • 2-Tablespoons-Olive Oil

  • 1-Clove Garlic, minced or pressed

  • 1-Small Red Onion, finely chopped

  • 1-Large Firm-Ripe Tomato, cored and chopped

  • 1-4 Ounce Can-Diced Green Chile's

  • 1 Pound-Shelled Cooked Crab Meat

  • 12-6 Inch-Corn tortillas
    Salsa

  • 1/2 Cup-Chopped Cucumber

  • 1-Fresh Jalapeno Chili, stemmed, seeded, and minced

  • 1 Cup-Diced, Fresh or Canned Pineapple

  • 1 teaspoon-Grated Lime Peel

  • 3 Tablespoons-Lime Juice

  • 2 Tablespoons-Minced, Fresh Cilantro

  • Salt, to taste





Directions:



In a 10 to 12-inch pan, over medium-high heat, stir oil, garlic, and onion often until onion begins to brown, 8 to 10 minutes. Add tomato and chilies; simmer until tomatoes are soft, 8 to 10
minutes.

Remove from heat and add the crab meat.

Meanwhile, stack the tortillas, wrap in foil, and warm in a 350 degrees F oven, about 10 minutes.

To make the salsa, mix cucumber, chili, pineapple, lime peel, lime juice, and cilantro. Spoon about 1/3 cup of the crab filling onto a tortilla, then, add the salsa and salt to taste.

Fold in half to enclose filling. Repeat for remaining tacos.

Serve right away with shredded lettuce, cheese, and avocado.
