Crab Croquettes

Crab Croquettes

1# fresh crabmeat
1 cup panko bread crumbs
1/4 cup mayonnaise
1 egg, beaten
1 tablespoon lemon juice
3 teaspoons Worcestershire sauce
2 teaspoons Dijon mustard
3 teaspoons seafood seasoning (Old Bay)
3 tablespoon green onions, chopped
1 teaspoon chopped fresh parsley
1/4 teaspoon salt
1/4 teaspoon pepper
Oil for frying

In a large bowl, combine breadcrumbs, mayonnaise, egg, lemon juice, Worcestershire sauce, mustard, seafood seasoning, green onions, parsley, salt & pepper; mix well. Fold crabmeat into breadcrumb mixture and mix gently until well combined. Form mixture into 5 large or 10 small equal-sized "croquettes". Using a deep fryer, heat oil to 350º. Add croquettes in batches and cook 3 to 4 minutes, flip, cook for another 3 to 4 minutes or until golden and heated through.
