Crab Taco's

Love crab? Love taco's? Let's put them both together! Try this Crab Taco's Recipe, not just for something different tonight, but for something awesome!
This is also a great recipe to use for celebrating Cinco de Mayo!



Ingredients:



  • 1 pound (16 oz.)-Crab Meat (from 2 to 3 pounds of Alaska King, Snow or Dungeness crab-shelled and picked over for shells and cartilage)

  • 4-Red Bell Peppers

  • 1 cup-Sour Cream

  • 1/2 cup-Fresh Cilantro, chopped

  • 2 teaspoons-Lime Juice

  • 2 cups-grated Mexican Cheese Blend or Monterrey Jack cheese

  • 8 small-Tortillas, warmed

  • Favorite hot sauce, if you so desire!





Directions:


Rinse frozen Crab legs under cold running water to remove any ice glaze; pat dry with paper towels.

Steam the frozen crab legs in a large pot for 6 to 8 minutes, until heated through. When cool, use your crab shears to cut the shells open and remove the crab meat.

Over an open grill or medium-sized pan on the stove, roast the bell peppers until blackened. Cool slightly. Seed and thinly slice peppers.

Mix the sour cream, cilantro and lime juice together in a small bowl; set aside.

To serve, divide the red pepper strips, cheese and crab meat between tortillas. Top with 2
tablespoons of the sour cream mixture. Serve with your favorite hot sauce, if desired.
