Whiskey Crab Soup

Whiskey Crab Soup...Oh how this looks and tastes so familiar!...


Ingredients:




  • 1 Pound-Crab Meat

  • 1 Cup-Butter

  • 2 heaping teaspoons-Flour

  • 1 Lemon, sliced

  • 4 cups Half & Half cream

  • 1 teasp. salt

  • 1/2 teasp. White Pepper

  • Tabasco to taste

  • 1/2 Cup-Whiskey

  • Paprika





Directions:


Remove all shells from the crab meat.

In a large, heavy saucepan, melt the butter over low heat and stir in the flour, mixing well with a wooden spoon. Add the sliced lemon and the cream.

Stir the mixture until smooth and bubbly. Simmer over low heat for about five minutes.

Add the whiskey and the fold in the crab meat and heat through. Correct the seasoning to taste. Spoon into heated bowls and sprinkle with a little paprika.

*A similar soup is served at the Cliffhouse Restaurant in Bellingham, Washington.
